People’s preference varies on how they love their pancakes. What I found out that most of them, they don’t like it extra sweet cause they will add maple syrup later on. Also, they like it soft and fluffy. Getting a soft fluffy pancake isn’t a hard work to achieve. It’s always about the dry-liquids ratios and using raising agents.

Ingredient:
Enough for 1 to 2 people
3 tbsp vegetable oil (Olive oil works)
¾ cup flour
¾ cup room temprture milk
1 egg yolk
1 egg white
1 tbsp baking powder
1/2 tsp Sodium bicarbonate
A small pinch of salt
2 ½ tbsp sugar
blueberries, powdered sugar, strawberries, and maple syrup for decoration.
Directions:
1- In a bowl, sift in the dry ingredients (flour, baking soda, and baking powder) then add a pinch of salt.
2- Mix all the liquid ingredients with the sugar in a separate bowl (Oil, egg yolk, milk, and sugar).
3- Add the liquid mixture gradually to the dry ingredients, give it a slight mix, then pop it in the fridge to chill for a few minutes.
4- Meanwhile, beat the egg white on high speed until a stiff peak is formed.
5- Then, add 2 tbsp of the batter to the egg white and fold in gently (fold in approximately for 3 times, don’t over mix).
6- Pour the egg white mixture to the batter and start folding until well combined (Also, don’t over mix, you just need to fold in about 5 times. Otherwise you’re going to lose all the air you’ve created in the egg white. This air is what makes the pancakes fluffy).
7- In a hot pan, melt a couple tbsp of butter, pour a scope of the batter (If you wanna add raisin and blueberries, this is the right time to add it) and cook on both sides on medium low heat. You know your pancake is ready to flip over and cook on the other side when bubbles start to create. When you flip the pancake to the other side, don’t press down with the back of your spatula. Just flip it and leave it to cook, don’t touch it.
8- Transfer to a plate and drizzle some maple syrup on top, decorate with fruits and sprinkle some powdered sugar.
