So here i’m gonna share with you 4 tricks that can lead you to make the fluffiest pancakes ever! some of them I’ve used to follow before and some I just discovered by making them a million time ! 

Tip 1: Always make sure all your ingredients at room temperature: 

This might be heard a few times before but it makes a difference. Especially if you’re working with ingredients that sensitive to temperature, such as eggs. 

Tip 2: Use a beaten egg white:

Yes, this helps to puff the pancakes and make them super spongy. The whole process is simply as follow, if your recipe contains 2 eggs, so your gonna break 2 eggs and separate the yolks from the whites. Use the 2 yolks with the recipe and leave the whites aside. Once you’re done with the batter and before pour them to the pan, whisk the egg whites until stiff and add it gradually to the batter. Don’t over mix the batter so you don’t lose all the air bubbles you have created from the egg white. 

Tip 3: Make sure your baking powder is functioning:

Just add 1 tbsp of baking powder to worm water. If you see air bubbles start forming on the surface, it means your baking powder is ready to go. 

Tip 4: Use yeast: 

This might help a bit! If you can’t beat an egg or your baking powder is expired, you can just use half tsp or one tsp of yeast to your pancake mixture. You will see the pancakes start to puff as soon as you get them on the pan and everyone will be happy ! 
Don’t worry! no one will know that you skipped the baking powder part !
